This ranch flavored salsa tastes as good as it looks. It's a nice blending of
ranch dressing, chunky salsa, fresh tomatoes and green chilies.
1/2 cup Ranch salad dressing
1/2 cup thick and chunky mild salsa
Fresh
tomatoes, chopped
Diced green chilies Tortilla chips
Directions
Combine Ranch dressing, salsa, tomatoes and chilies, if desired. Chill salsa
in refrigerator for 1 hour before serving. Serve with tortilla chips.
Best Mexican Guacamole
This is a real simple guacamole recipe that's great with tortilla chips
2 avocados
1/2 lime, juiced
1/4 cup fresh tomato, chopped
2
tablespoons onion, chopped
1 clove garlic, minced
1 tablespoon cilantro,
chopped (optional)
1/2 teaspoon salt
1 teaspoon olive oil
Directions
Cut the avocadoes in halves. Remove the seeds and scoop out the pulp into a
small bowl. Use a fork to mash the avocado. Stir in the lime juice, tomato,
onion, garlic, salt, cilantro and olive oil. Cover the bowl and refrigerate for
1 hour before serving.
Hot Mexican Spinach Dip
This is a very special dip that mingles the flavors of spinach, salsa and
Monterey Jack cheese.
1 (16 oz.) jar salsa
1 (10 oz.) pkg. frozen chopped spinach, thawed and
drained
2 cups Monterey Jack cheese, shredded
1 (8 oz.) pkg. cream cheese,
diced and softened
1 (2.25 oz.) can chopped black olives, drained
1
tablespoon red wine vinegar
Salt and pepper to taste
Directions
Preheat oven to 400 degrees.
In a medium baking dish, mix together the salsa, chopped spinach, Monterey
Jack cheese, cream cheese, black olives, red wine vinegar, salt and pepper.
Bake dip mixture for 12 to 15 minutes or until bubbly.
