My Famous Watergate Cake

<>This cake is called the 'Watergate Cake.' My friend Gail was not sure how the cake got it's name. It really didn't matter much because it was very delicious. Here is the recipe, I hope you will enjoy it as much as my guests and family:
- 1 box white cake mix
- 2 boxes pistachio pudding mix
- 1 cup cooking oil
- 1 cup club soda
- 3 eggs
- 1/2 cup chopped nuts (optional)
- 8 oz. container cool whip
Grease and flour fluted pan or 2 small layer cake pans
Mix together cake mix, 1 box pudding, oil, club soda, and eggs in a large bowl for 2 minutes on medium speed. Scrape sides of bowl often. Stir in nuts. Bake in pre-heated oven at 350 degrees, 40-43 minutes for fluted pan, or 35 minutes for layer pans.
Cool cake(s) completely on a wire rack.
For Frosting: beat cool whip and 1 box pudding mix until well blended.
Frost entire cake and chill until ready to serve. Keep unused portion refrigerated.
This cake is very light and refreshing. Using cool whip adds less calories than traditional frostings. Reducing the intake of sugars is important to our health and well being. The nuts can be omitted to help reduce more calories. I made the watergate cake several times without the nuts and it was just as delicious as with the nuts.
You do not have to omit flavor to eat healthy, in fact Making smart choices are all that it takes. Prevention is the key element to longevity. As I get older I realize the importance of a healthy lifestyle.
