Double Flipper Pizza

We used Lavish bread as a base for this gourmet pizza.
I have also used pita breads and flat breads of many other ethnic origins, ie. chapattis, tortillas, etc. with great success.
The only rule I abide by is that it must form a base that is strong enough to support the ingredients in a manner that doesn't fold, sag or limp out.
The children in my class designed this double flipper (folded lavish bread) so that it complied with my predilection - the lavish bread can be used in duplicate to give it strength.
*Tip* The base can be put into a hot oven to 'crisp' prior to adding the ingredients - however, don't' apply so much heat that the base becomes brittle and 'breaks.'
Double Flipper Pizza
Ingredients • Lavish bread base - about the size of a square dinner plate - use 2 for support or fold them over to make 'petit pizza.' • Tomato paste - 1 small can • Cheese - 100 gms grated cheddar • Pineapple - 100 grams fresh or canned • 1 Red Onion • 2-3 Shallots • 1-200 gms. Mushrooms • 50 gms. Pitted Kalamata olives • 1 Lime • 1 Avocado • 2-3 T. Honey • 1-2 T. Sweet Chilli sauce • 100 gms - Mozzarella Cheese - 100 grams • 2-3 T. Sour Cream
Method • Slice and dice the onion and garlic into small pieces and sauté lightly in 2-3 T. of light oil (sunflower, safflower) • Add sliced mushrooms at the end of the sauté to soak up the oil and turn a light brown. • Turn off the heat and let stand in the pan. • In a med. sized bowl, put: Olives, pineapple pieces, finely chopped shallots and mix with a squeeze of lime. • Mash avocado in small bowl adding the juice of lime and honey.
Building the Pizza 1. Spread a layer of tomato paste over the base. 2. Sprinkled ½ of the cheddar cheese on top. 3. Put into a hot oven for 2-3 minutes. 4. Take out of oven and drizzle the sauté on top. 5. Add olives shallots and pineapple pieces. 6. Smother with spoonfuls of avocado cream. 7. Sprinkle the remaining ½ of the cheddar cheese. 8. Put back in oven until cheese has melted slightly. 9. Remove from oven once more and add grated mozzarella, sour cream and chilli sauce (if desired) 10. For the last time - put in hot oven until toppings have melted to a golden colour.
