There is nothing like a steak cooked to perfection, with the juices just exploding in your mouth. The perfect cut of beef has three factors that contribute to to such an experience. First, is the cut you want because there are different parts to choose from. Then, you have to decide what thickness and how well you like the steak.

Out of all the conversations I've had one statement comes up more than anything 'I can't cook meats'. Here's a tip to help you with beef so you can cook it and order exactly what you want at your favorite restaurants. Time varies by the size of the meat, but this gives you an idea.

Rare- seared on both sides for 2 minutes w/ red meat in the middle, thin gray layer and red juices.

Med. Rare- cooked for about 5 minutes on the first side and about 3 minutes on the second w/ the middle red and some pink, and pink juices.

Medium- cooked about 5 minutes on both sides w/ the middle pink turning gray and clear with little pink juices.

Med. Well- cooked about 6 minutes on the first side and about 7 minutes on the second side w/ little pink and clear juices.

Well- cooked all the way through total time about 15 minutes w/ the middle gray with clear juices.

One time I had a customer come in the night after the Arizona Diamondbacks won the MLB World Series. He said ' I want a steak cooked a hair over medium.' My co-workers started making those comments that makes it seem as though i shouldn't attempt it. I cooked the steak and handed it to the gentleman, then left him to eat. When he was finished he came up to me, and said 'Randy Johnson isn't eating this well tonight.'
